What an Eggplant Stem Cutter Does
Canned, pickled, frozen and sliced eggplant products all start by removing the stem and the green calyx. Done by hand it is one of the slowest, most repetitive steps on the line; done by a machine it is the first place where product loss shows up, because a cut placed a few millimetres too deep is thrown away with the stem.
