Cleaning
Wheat is cleaned of stones, dust, straw, light seeds and metal before any thermal step. Screen cleaners, aspirators, destoners and magnets are standard grain-handling equipment; their sizing follows the incoming wheat quality and the target throughput.
Conditioning and Cooking
The defining step of bulgur: wheat is soaked or conditioned and cooked so that starch gelatinises and nutrients migrate into the kernel. Batch and continuous cooking systems differ in energy use, consistency and footprint. Temperature, time and water are the process variables that automation controls and records.
Drying
Cooked wheat is dried to a moisture level that allows dehulling and cracking without loss. Drying technology — belt, tray or drum, air or sun-assisted — is a project decision driven by climate, energy and product colour targets. Moisture control at the dryer outlet is where instrumentation earns its place.
Dehulling and Cracking
Dried kernels are dehulled to remove the bran layer and then cracked in mills to the target particle size. Roll settings, feed rate and moisture decide the yield of each grade; recipe management for grades is an automation option in a modular project.
Classification and Sorting
Cracked product is sieved into grades — coarse, fine, extra-fine — and then sorted for colour defects and foreign material. Optical sorting is where DOKTEK's vision platform applies directly: per-particle classification at line speed, engineered for the grades and defects the plant defines.
Packaging
Graded bulgur is weighed and packed into retail or bulk formats. Packaging equipment is integrated into the line's control so that grade changes and counts are handled consistently.
