The dosing and fold stations are built and running on DOKTEK's pilot line. Full rolling automation, and every other step, is existing plant equipment or line engineering defined per project.

Where the Labour Actually Goes

In most stuffed grape leaves plants, the rolling table is the largest concentration of people in the building. Leaf preparation and cooking are already mechanised or batch-based; the roll itself is still a hand gesture repeated thousands of times per shift. That is why the rolling station is where automation changes the economics, and why it is the station DOKTEK has built and is piloting, station by station.

The honest version of the calculation counts what surrounds the table as well: the people who sort leaves by size before rolling, the people who correct loose rolls afterwards, and the seasonal availability of trained hands.

Leaf Preparation and Feeding

Automation upstream of the roll is about presenting one leaf at a time, flat, with a known orientation. Brined leaves arrive in bundles and must be separated and drained; blanched fresh leaves are softer and tear more easily. Whether leaf feeding is automated, assisted or manual is a project decision that depends on the leaf condition the plant actually receives.

Filling Preparation and Dosing

The filling is prepared in batches by the plant's existing kitchen process. What the rolling station needs is a filling that flows consistently into a dosing system: temperature, moisture and particle size all change how a rice or bulgur mixture doses. Recipe management at the station is a development option so that the same station can hold more than one product specification.

The Rolling Station

The rolling station is the DOKTEK ROLL pilot line: leaf placement, filling dosage, pre-fold, rolling, forming and discharge as separate controlled steps. Filling dosage and pre-fold are built and running today; the rest is under engineering. Tray Loading, Cooking and Packing

Rolled product is arranged in trays or pots for cooking, and later packed as chilled, frozen, canned or jarred product. Tray loading is a development option on the rolling station; cooking and packing remain the plant's existing processes. Line integration defines the handover between them.

What to Measure Before Deciding

A useful review starts with measured facts from the plant floor rather than a wish list: pieces per operator-hour today, the reject rate of loose or torn rolls, the size range of incoming leaves, the number of recipes, and the seasonality of production. These numbers decide whether a rolling station pays for itself, and they belong to the processor, not to a brochure.

Can the rolling station be added to an existing plant?

That is the intended use: it is designed to sit between the plant's leaf and filling preparation and its existing cooking and packing steps, with feeding and discharge engineered to the line.

Does the line need leaves sorted by size?

It depends on the recipe and on how much variation the rolling station is engineered to handle. Vision-assisted leaf detection is a development option intended to reduce manual pre-sorting.
