Stuffing a cored pepper by hand is quick for one person and slow for a factory. DOKTEK FoodTech is engineering controlled filling solutions for peppers, zucchini, eggplant and similar stuffed foods — dosed, repeatable and configured to the recipe.

Filling Process Concept

Filling is only repeatable once the vegetable is held in a known position and the filling arrives in a known quantity. The concept separates those two problems.

The Engineering Problem

No two peppers have the same cavity. Volume, wall thickness, opening diameter and the way the vegetable stands all vary from piece to piece, which is why a hand adapts the fill on every one. A fixed-volume filler either overfills small cavities or under-fills large ones.

The DOKTEK approach is to establish the cavity before dosing: detect the vegetable, its opening and its orientation, then fill to a controlled level rather than a fixed volume. This is the same product-first principle as the eggplant machine, applied to a filling operation instead of a cut.

Each vegetable is a separate application because cavity shape, wall strength and the way the piece is presented differ.

Filling Behaviour

Rice mixtures with oil, bulgur mixtures, minced-meat recipes and vegan fillings dose differently. Particle size, moisture, fat and temperature all change how the filling flows and compacts; a recipe change can require a dosing change. Recipe management is a development option so that the same station can hold more than one product specification.

Application compatibility is evaluated according to vegetable and recipe characteristics; DOKTEK does not guarantee compatibility for a recipe it has not run.

Is the dolma filling machine available?

Not as a finished machine. It is an engineering project. DOKTEK reviews each enquiry against the vegetable and the recipe and proposes what can be engineered and validated for that line.

Does it core the vegetables too?

Coring is usually the plant's existing step. Whether a project includes coring, and how the cored vegetable is fed to the filling station, is decided per application.

What fill weight accuracy does it achieve?

No accuracy figure is published for a machine in engineering. Fill-level control is a development option, and its performance is validated on the customer's product.

Can it fill grape leaves as well?
