Automatic Grape Leaf Rolling Machine

Consistent rolls. Controlled filling. DOKTEK FoodTech has built and is validating dosing and fold stations for automatic grape leaf rolling — running on real leaves — for processors whose stuffed-leaf production still depends on rows of skilled hands.

The dosing and fold stations are built and running in DOKTEK's own pilot line, shown in the video and photos on this page. Full rolling-to-discharge automation is still in development, and the line is not yet released as a standard catalogue machine.

The Pilot Line, Station by Station

The manual gesture of rolling a leaf is one continuous movement. DOKTEK's pilot line breaks it into repeatable stations — dosing and fold are built and running, shown in the video above — each sensed, controlled and validated on its own.

Filling dosage and pre-fold are running on the pilot line today. Leaf placement, rolling, final forming and discharge automation remain under engineering.

Why Grape Leaf Rolling Resisted Automation

A grape leaf is not a packaging material. Its size varies by variety, harvest and position on the vine; it tears along the veins; brined leaves behave differently from fresh or blanched ones; and the same leaf may be rolled loose in one kitchen and tight in another. A machine built around one nominal leaf fails on the second batch.

DOKTEK's approach follows the principle behind its other machines: sense the real product before acting on it. Leaf dimensions, orientation and defects are characteristics to be detected, not assumptions to be built into the mechanism. That is what makes the project an engineering programme rather than a catalogue item.

Potential Applications

Grape leaves are the first application, because they are the product where the labour problem is largest. The same station concept is evaluated for other edible leaves whose dimensions, tear resistance and flexibility allow a controlled roll.

Filling Types

Filling behaviour decides the dosing design as much as the leaf decides the rolling design. A loose rice mixture, a bulgur mixture, a minced-meat recipe and a vegan filling with vegetables all flow, compact and hold shape differently.

Application compatibility is evaluated according to leaf and recipe characteristics. DOKTEK does not guarantee compatibility for a recipe it has not tested.

What Consistency Means in Production

For a processor, a consistent roll is a commercial specification: the same filling weight, the same diameter and length, the same tightness, so that cooking time, tray count and pack weight hold shift after shift. A machine that rolls fast but inconsistently only moves the labour to a sorting table.

The engineering target for the DOKTEK ROLL project is therefore repeatability first — the same result on leaf after leaf — with throughput defined afterwards for each configuration rather than promised in advance.

What is confirmed today

Confirmed: the dosing and fold stations shown above are built and running on DOKTEK's own pilot line — real footage, not renders — using the vision, motion and mechanical engineering demonstrated on its production eggplant machine. Full rolling-to-discharge automation is not yet shown running and remains under engineering.

Not confirmed, and therefore not published: capacity, filling weight range, leaf size range, roll dimensions, delivery time and price. Each is defined per project and subject to validation on the customer's product before it is released as a standard catalogue machine.

Is the grape leaf rolling machine available to order?

Not yet as a standard catalogue machine. Its dosing and fold stations are built and running on DOKTEK's pilot line and under validation; full rolling-to-discharge automation is still in engineering. DOKTEK reviews each enquiry against the customer's leaf and recipe and proposes what can be validated and configured for that line.

Does it work with brined grape leaves?

Brined, blanched and fresh leaves behave differently in handling and rolling. Leaf condition is one of the first inputs of the engineering review, and compatibility is evaluated on samples rather than assumed.

Can it roll cabbage or other leaves?

The station concept is evaluated for other edible leaves. Cabbage rolls are treated as a separate application because the leaf is larger and stiffer — see the cabbage roll machine page.

What roll size and filling weight does it produce?

Roll dimensions and filling weight are recipe and market decisions, so they are configured per project rather than fixed by the machine. No standard figures are published.

How many pieces per hour?

No capacity figure is published for a machine that is still in engineering. Throughput will be defined per configuration after validation, not promised in advance.
