Why Cabbage Is a Different Engineering Problem
A grape leaf is thin, flexible and small; a cabbage leaf is a stiff sheet with a central rib that resists folding until it is blanched or fermented. Rolls are larger and heavier, the filling weight is several times that of a grape-leaf roll, and the leaf's curvature is inherited from the head it came from.
That changes the mechanics of every station: how the leaf is presented flat, how the rib is handled, how much force the fold needs and how the finished roll keeps its shape until cooking. DOKTEK therefore treats cabbage as its own application of the rolling project rather than a setting on the grape-leaf machine.
Leaf Condition Decides the Process
Blanched white cabbage, savoy cabbage and fermented sour cabbage roll differently. Fermented leaves are softer and more forgiving; fresh blanched leaves depend on blanching time; savoy's crinkled surface changes both handling and fill contact. The engineering review starts with the leaf the plant actually uses.

Filling and Roll Specification
Cabbage roll recipes vary by market: Balkan sarmale with minced meat and rice, Turkish etli lahana sarması, Eastern European golubtsi. Roll length, diameter and filling weight are commercial specifications set by the processor and its customers, so they are configured per project, not fixed by the machine.
