Vision-guided slicing and dicing

Eggplant Slicing & Dicing Machine

Stem removal and slicing or dicing are different processing steps with different equipment. DOKTEK FoodTech runs a dedicated slicing and dicing line, separate from its eggplant stem-cutting machine, built on the same vision-guided automation approach.

A Separate Line From DOKTEK's Stem-Cutting Machine

Stem or head removal and slicing or dicing solve different problems: one removes a fixed irregular feature, the other produces a repeatable cut across the whole product. DOKTEK FoodTech builds and sells them as separate lines rather than one machine trying to do both.

Both share the same underlying approach: machine vision identifies the product before the cutting mechanism acts on it, instead of assuming every piece is the same shape.

Not Locked to One Vegetable

The slicing and dicing line is already used on eggplant and cucumber, and DOKTEK evaluates other vegetables case by case rather than restricting the platform to a fixed product list.

Because each product is measured individually before the cut, natural variation in size and shape does not require a different machine.

For Processors and Integrators

The line can be discussed as a standalone stage or integrated with feeding, washing, inspection and downstream packing or freezing equipment.

DOKTEK FoodTech reviews the product, target cut geometry and line layout before confirming a configuration — it does not publish a single generic capacity or blade-thickness figure that would apply to every product.

What Must Be Confirmed Before Quotation

As with DOKTEK's other lines, a serious quotation depends on real product samples and the target line, not a catalogue spec sheet.

  • Target vegetable(s) and expected size range
  • Required cut type — slices, dice, strips or a mix
  • Target production rhythm and current method
  • Available line space and downstream process

Frequently asked questions

Questions before a machine evaluation.

01

Is this the same machine as DOKTEK's eggplant stem cutting machine?

No. It is a separate DOKTEK line built for slicing and dicing rather than stem removal, sharing the same vision-guided automation approach.

02

Which vegetables does it handle today?

Eggplant and cucumber are confirmed today. Other vegetables are evaluated from real samples rather than assumed to work.

03

Can DOKTEK publish cut thickness or capacity numbers here?

No responsible manufacturer publishes a single number that applies to every product. Cut geometry and throughput are configuration-dependent and confirmed from samples.
