Dolma Machine: Filling or Rolling?

'Dolma machine' means two different machines. Stuffed vegetables need a filling operation; stuffed leaves need a rolling operation. This page maps the products a processor calls dolma or sarma onto DOKTEK's two engineering projects, so the enquiry starts in the right place.

The two projects referenced here are at different stages: the leaf line's dosing and fold stations are built and running on DOKTEK's pilot line; full rolling automation and vegetable filling are engineering projects. Neither is sold as a finished machine.

Two Operations, Not One Machine

A pepper dolma is a cavity that receives a dose of filling. A grape-leaf sarma is a sheet that is folded around a dose of filling. The first is a dosing and positioning problem; the second is a folding and rolling problem. A machine that does one well is built around different mechanics from a machine that does the other.

DOKTEK therefore runs two projects rather than one 'dolma machine': dolma filling automation for cored vegetables (an engineering project), and the automatic grape leaf rolling machine for leaves (dosing and fold stations built and running on DOKTEK's pilot line, full rolling still in engineering), with cabbage rolls as a not-yet-validated application of the second.

The mapping is by operation, not by cuisine. The same rule applies whether the product is called dolma, sarma, dolmades, warak enab, sarmale or golubtsi.

What They Share

Both projects sit on the same DOKTEK platform: machine vision to establish what the product is and where it sits, servo motion to act on it, recipe management as a development option, and stainless-steel construction for wash-down areas. Both are engineered around the food rather than forcing the food to fit the machine.

How an Enquiry Proceeds

Send the product and the recipe, a short video of the current manual method, the number of operators and the target pieces per hour. DOKTEK's engineers identify the operation, decide which project applies, and reply with what can be evaluated for that line and what would need validation on samples.

What is confirmed today

Do you sell a dolma machine?
