Dolma Production Automation: Key Engineering Challenges

Filling a cored pepper looks simple until a machine has to do it on peppers that are all different. This article sets out the five engineering challenges of dolma filling automation and how DOKTEK's product-first approach addresses each — as an engineering project, not a finished machine.

Challenge 1: Cavity Variation

Cavity volume, wall thickness and opening diameter vary from pepper to pepper. A fixed-volume filler overfills small cavities and under-fills large ones; both are rejects. The answer is to establish each cavity before dosing — detect the vegetable, its opening and orientation — and fill to a controlled level rather than a fixed volume.

Challenge 2: Filling Behaviour

A rice mixture with oil, a bulgur mixture, a minced-meat recipe and a vegan filling all flow, compact and hold shape differently, and change with temperature and moisture. Dosing has to be engineered for the recipe, and recipe management is what lets one station carry several products without re-engineering.

Challenge 3: Holding the Vegetable

A pepper does not stand upright on its own, a zucchini rolls, an eggplant half rocks. Positioning each piece in a known pose for filling is a handling problem that is different for every vegetable — which is why each is treated as its own application.

Challenge 4: Fill-Level Control

Overfilled dolma burst in cooking; under-filled ones fail the pack weight. Fill-level control — sensing the fill as it happens rather than trusting a dose — is a development option whose performance has to be validated on the real product, which is why no accuracy figure is published for a machine still in engineering.

Challenge 5: Line Integration

Coring is usually upstream, cooking or freezing downstream. The filling station has to receive cored vegetables at the line's rate and discharge filled ones in the arrangement the next step needs. Feeding, discharge and tray loading are scoped per project, because they depend on the plant.
